| Vegan- Non-GMO Tempeh Stir Fry Tempeh is a fermented food made by the controlled fermentation of cooked soybeans with a Rhizopus mold (tempeh [tempeh]starter). The tempeh fermentation by the Rhizopus mold binds the soybeans into a compact white cake. Tempeh has been a favorite food and staple source of protein in Indonesia for several hundred years. Tempeh has a firm texture and a nutty mushroom flavour. Tempeh can be used in different ways. Normally tempeh is sliced and fried until the surface is crisp and golden brown or tempeh can be used as ingredient in soups, spreads, salads and sandwiches. |
| Sesame-crusted Seitan on Tahini Broccoli Slaw Seitan (say-TAHN) is made from gluten. Gluten is the name of the insoluble protein in wheat, probably most familiar as the stuff that makes bread dough elastic. Known as “Seitan” in Japan, as “kofu” in China, and as "wheat meat" and "gluten" here in the U.S., seitan is a low fat, high protein, firm-textured meat substitute. It has been eaten in China, Japan, Korea, Russia and the Middle East for thousands of years. Gluten is often referred to in Chinese restaurants as "Buddha food", because of the claim that it was developed by pacifist, vegetarian Buddhist monks as a meat substitute. It is a food rich in tradition as well as nutrition. |

Seitan Piccata
| Seitan Piccata - Recipe This was a very good dinner....Do you know what Seitan is? It is vital wheat gluten flour. I have bought it in the store at whole foods but expensive and I didn't think tasted very good. Using my 1000 Vegan Recipe book she had a recipe to make Seitan from scratch. It is a very elastic dough when made and is marinated in a broth and seasonings. When you want to use it for a meal, you can slice it and add flavorings and bake or cook stove top and is a Vegan replacement for meat. It is somewhat like tofu in that it will take on the flavor of sauces etc. Easy to make. The pictures above are Seitan Piccata (instead of chicken piccata :)) The recipe I did tasted just like chicken piccatta but without the meat. Unbelievable! The side dish was a potatoe,spinach,artichoke casserole using nutritional yeast as cheese also without a doubt delicious. Almost forgot the Seitan is high in protein like 85-95% protein can't remember the exact percentage. Also high in selenium and phosphorus |
